Egg salad is a buffet staple, but not always the healthiest option, with most recipes calling for whole egg yolks and at least a ½ cup of mayonnaise. Kiss the yolk goodbye and swap the mayo for Greek yogurt to save big on calories and fat—without anyone knowing the difference!
Nonstick cooking spray
1 large onion, chopped
1 bag (1 pound) frozen spinach, thawed and squeezed dry with a paper towel
2 teaspoons salt
1 teaspoon pepper
1 dozen boiled egg whites, chopped
6 tablespoons nonfat Greek yogurt
1 teaspoon mustard powder
¼ teaspoon garlic powder
¼ teaspoon fresh dill weed, minced
1. In saucepan sprayed with nonstick cooking spray, sauté the onion over medium heat for about 5 minutes, until translucent. Add the spinach, salt and pepper until heated through. Let cool.
2. In medium-size bowl, combine the remaining ingredients with the sautéed spinach and onion mixture.
3. Mix thoroughly and refrigerate for 1 hour before serving to bring out all the flavors.
