Cheesecake is a classic dessert loved by almost everyone—especially around the holidays! But oh—the cream cheese, eggs, and buttery graham cracker crust! This recipe, from Tanya Zuckerbrot’s new book, The Miracle Carb Diet, we swap a few ingredients for a delicious cheesecake that is airy and creamy, without excess calories and fat.

Ingredients:

  • 1 (10-ounce) jar sugar-free jam (Polaner All Fruit with Fiber or Smucker's)
  • 1 1/4 cups Fiber One Cereal
  • 24 ounces Fat-free cream cheese
  • 2 (16-ounce) cartons Egg Beaters 100% egg whites
  • 10 packets nonnutritive sweetener

Directions:

  1. Preheat the oven to 350 °F.
  2. Combine the sugar-free jam with the cereal, and spread the mixture in a nonstick quiche dish (approximately 11 inches in diameter).
  3. In a blender, mix the cream cheese, egg whites, and nonnutritive sweetener. Pour the mixture on top of the cereal.
  4. Bake for 40 minutes.
