Jelly-Filled “Donut”

 

Cause sometimes a jelly donut is just what the doctor ordered!

Ingredients (Serves 1):

  • 1/4 cup Truvia
  • Egg whites of 3 eggs 
  • 1 Tbsp vanilla extract
  • 1/4 tsp cinnamon
  • 1 Tbsp nonfat vanilla Greek yogurt 
  • 4 high fiber GG crackers, pulverized into sprinkles
  • Nonstick cooking spray
  • 2 Tbsp sugar-free jelly
  • Preparations: 

    1. Blend Truvia in a blender. Pulse until it resembles confectionary sugar. Place aside. 
    2. Beat egg whites until still. 
    3. Fold 1 Tbsp powdered Truvia, vanilla, cinnamon, Greek yogurt and GG sprinkles into the egg whites.
    4. Spray pan with nonstick cooking spray and place over medium heat. 
    5. Pour 3/4 mix into pan and cook until edges begin to brown. Add jelly into center. Add remaining batter on top. Flip “donut” to cook reverse side for 1-2 minutes. 
    6. Remove donut from heat. Plate and sprinkle with remaining powdered Truvia, to taste. 

    Nutritional content per serving (serves 1): 216 calories, 16g protein, 39g carb, 24g fiber (15g net carb), 3g sugar, 1g fat
