Dairy-Free Fiber Waffles

I’m obsessed with the waffle maker I got this past summer – who knew turning fiber crackers into waffles could be so easy?! Don’t have a waffle maker? Use this batter to make high-fiber pancakes! #FFACTORAPPROVED

Ingredients (Serves 1):

  • 4 high fiber GG crackers, pulverized into sprinkles
  • Egg whites of 4 large eggs
  • 1 packet Truvia
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon
  • Nonstick cooking spray


  1. Turn waffle maker on to heat.
  2. In a blender pulverize GGs into GG “sprinkles”.
  3. Add egg whites, Truvia, vanilla, and cinnamon to blender and pulse until ingredients are well combined into a batter.
  4. Once waffle maker is ready, coat both sides with non stick cooking spray. Pour batter in and follow directions on waffle maker to cook waffle to desired doneness. 
  5. Remove waffle and top with fruits and berries of your choosing.
