Chocolate Chip Banana Bread

INGREDIENTS (serves 12):

  • 1 cup (4 scoops) 20/20 Fiber/Protein Powder (chocolate or vanilla)
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 2/3 cup almond flour
  • 2 bananas, smashed
  • 2 tsp coconut oil
  • 1/2 cup nonfat Greek yogurt
  • 8 egg whites
  • 1 tsp vanilla extract
  • ½ cup Lily’s Chocolate Chips or any brand no-sugar added chocolate chips (set aside 1 Tbsp Chips for garnish)
  • PREPARATIONS:

    1. Preheat oven to 400°F. Coat a loaf pan with nonstick cooking spray.
    2. Mix all dry ingredients together in a large bowl.
    3. In a separate bowl, mash 2 bananas. Add coconut oil, Greek yogurt, egg whites and vanilla extract.  Whisk until well combined.
    4. Add wet ingredients to dry ingredients and mix until a lump-free batter is formed. Add chocolate chips and stir to combine.
    5. Pour batter into prepared loaf pan and sprinkle remaining Tbsp chocolate chips on top. Place in oven to bake for 50 minutes.
    6. Remove from oven. Let cool and slice.
