Feel free to add whatever ingredients you want to make the muffins your own: broccoli, spinach, mushrooms, peppers, onions, herbs, turkey bacon, turkey/chicken sausage, shredded mozzarella, the options are endless!
INGREDIENTS (serves 6):
- 12 egg whites
- 1 1/2 cup (6 scoops) Unflavored 20/20 Fiber/Protein Powder
- Preheat oven to 350°F. Coat a 12-cup muffin tin (or a 24-cup mini muffin tin) with nonstick cooking spray, set aside.
- In a bowl, whisk egg whites, 20/20 powder and pinch of salt. Fold in parmesan cheese.
- Pour egg mixture into prepared muffin tins, top with flavorings as desired and place in oven to bake for 20-25 min.
- Serve warm.
