20/20 Oatmeal Raisin Cookies

INGREDIENTS (yield 12):

  • 1/2 cup almond flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 cup + 1 Tbsp (for garnish) old fashioned oats
  • 2 Tbsp raisins
  • PREPARATIONS:

    1. Preheat oven to 350°F. Line a pan with parchment paper or a silicon baking sheet, coat with nonstick cooking spray and set aside.
    2. In a mixing bowl, mix egg, apple sauce, and coconut oil (if using).
    3. Add remaining ingredients (minus the 2 Tbsp oats for garnish) and mix until a well-combined batter has formed.
    4. Spoon batter onto prepared cookie sheet, ~1 inch apart. Batter should yield 12 cookies. Top cookies with additional oats as garnish if desired.
    5. Place in oven to bake for 12 minutes.
    6. Remove from oven. Allow to cool and enjoy, or store in freezer to maintain chewy texture.
