Bean-free Zucchini “Hummus”

It’s time we think outside the chickpea box (or hummus container). 

Ingredients (Serves 12): 

  • 1 medium zucchini
  • 1/3 cup raw tahini
  • 1/3 cup fresh lemon juice

  • 1 tsp minced garlic
  • 1/4 teaspoon sea salt, or to taste
  • 2 teaspoons ground cumin

Preparations: 

  1. Wash and dice zucchini. 
  2. Add all ingredients into a mini food chopper. Blend until smooth and creamy! Adjust seasonings to taste. 

Nutritional content per serving (serves 12):  45 calories, 1g protein, 3g carb, 0.5g fiber (2.5g net carb), 1g sugar, 4g fat
