INGREDIENTS (serves 6):
- 2 lbs (~8 cups) baby bell peppers
- Olive oil spray
- Preheat the oven to 425ºF. Line a rimmed baking sheet with parchment paper.
- In a bowl toss mini pepper in olive oil and salt. Spread out mini peppers on prepared baking sheet.
- Bake for ~20-30 minutes, turning once about 15 minutes in, until peppers appear “blistered” or charred. Remove from oven and sprinkle with additional salt, to taste.
