Blistered Mini Bell Peppers

INGREDIENTS (serves 6):

  • 2 lbs (~8 cups) baby bell peppers 
  • Olive oil spray
  • 1/2 tsp sea salt

    1. Preheat the oven to 425ºF. Line a rimmed baking sheet with parchment paper.
    2. In a bowl toss mini pepper in olive oil and salt. Spread out mini peppers on prepared baking sheet.
    3. Bake for ~20-30 minutes, turning once about 15 minutes in, until peppers appear “blistered” or charred. Remove from oven and sprinkle with additional salt, to taste.

    Serves 6. This is a Step 1 Approved recipe.
