Kids (and adults) love anything resembling ice cream. These cool refreshing treats are a cinch to make, and they are far lighter than ice cream bars – plus you get a nice fiber boost.
½ cup orange juice
½ cup cranberry-pomegranate juice
10 mint leaves, thinly sliced
2 ounce Dixie Cups
Mix the orange juice, cranberry-pomegranate juice, and mint in a small bowl.
Pour equal amounts of mixture into 4 Dixie cups.
Add a Popsicle stick to each cup and freeze.
Serves: 4 Popsicles
