INGREDIENTS (serves 2):
- 4 Trader Joe’s Jicama Wraps
- 4 lettuce leaves
- 3 oz turkey breast
- 1/2 cup sliced tomato
- Lay jicama wraps flat on a cutting board. Place piece of lettuce in center of each wrap.
- Layer a slice of turkey and 1/2 piece turkey bacon on each. Divide tomato slices between 4 wraps. Spread 1 tsp mayo along the center of each. Add jalapeno atop, to taste.
- One by one, starting at one end of the wrap, roll tightly towards the filling. Continue rolling until the filling is tightly wrapped and place a toothpick to hold the rollup together. Continue with the remaining wraps until all have been assembled.
