No-Carb Spicy BLT Roll-Ups

INGREDIENTS (serves 2):

  • 4 Trader Joe’s Jicama Wraps
  • 4 lettuce leaves
  • 3 oz turkey breast
  • 1/2 cup sliced tomato 
  • 2 slices Applegate Farms turkey bacon
  • 4 tsp Hellmann’s Light Mayonnaise
  • sliced jalapeno
  • PREPARATIONS:

    1. Lay jicama wraps flat on a cutting board. Place piece of lettuce in center of each wrap.
    2. Layer a slice of turkey and 1/2 piece turkey bacon on each. Divide tomato slices between 4 wraps. Spread 1 tsp mayo along the center of each. Add jalapeno atop, to taste.
    3. One by one, starting at one end of the wrap, roll tightly towards the filling. Continue rolling until the filling is tightly wrapped and place a toothpick to hold the rollup together. Continue with the remaining wraps until all have been assembled.
