Mocha Chip Protein Ice Cream

INGREDIENTS (serves 8):

  • 2 Tbsp instant coffee powder or 2 shots espresso 
  • 2 Tbsp cocoa powder
  • 3 packets Truvia
  • 1/2 cup Lily’s Sweets Chocolate Chips

    1. In a blender, combine all ingredients except chocolate chips. Blend for about 30 seconds, or until thoroughly mixed.
    2. Pour mixture into an ice cream maker, turn on the machine, and churn according to manufacturers directions, about 30-40 minutes. When there is about 10 minutes left, add chocolate chips and continue churning for directed time. 
    3. Transfer to an airtight container and place in the freezer for about 2 hours to harden up.
