**NEW** Quick & Easy Israeli Salad

This salad is delicious on its own or served on top of grilled chicken. 

INGREDIENTS (serves 4):

  • 1 large, seedless cucumber, diced
  • 1 box grape tomatoes, halved
  • 1 small yellow bell pepper, diced
  • ½ cup diced red onion
  • 2 Tbsp fresh parsley, chopped
  • 1 Tbsp olive oil
  • 2 Tbsp lemon juice
  • Salt and pepper
  • PREPARATIONS:

    1. In a large bowl, toss together all the vegetables. Add the lemon juice, olive oil, and parsley and mix thoroughly to coat.
    2. Season with salt and pepper. Serve cold, or at room temperature.
