Mini Chocolate Pancakes

INGREDIENTS (serves 2):

  • 1 tsp coconut oil
  • 4 egg whites
  • Optional- Top with Lillies chocolate drizzle and fresh strawberries
  • PREPARATIONS:

    1. Mix all ingredients together in a bowl. Whisk until smooth.
    2. Turn the stove and heat the pancake pan. When the pan is ready, coat with non-stick cooking spray. Pour about 1 tablespoon of the batter in each well and cook the pancake for about 1 minute and flip using a chopstick until desired doneness.
    3. Remove pancakes from the waffle maker and repeat step 3 until all batter is used. Serve warm.
