INGREDIENTS (serves 1):

  • 1/4 cup part-skim shredded mozzarella
  • 1 Tbsp grated parmesan cheese 
  • PREPARATIONS:

    1. Preheat oven to 350°F. Coat a nonstick skillet with nonstick cooking spray and place over medium heat. Add tortilla to skillet to toast both sides (flipping halfway through so both sides are evenly toasted). Remove from heat. 
    2. Brush tortilla with pesto sauce so that there is an evenly distributed layer with 1/2 inch rim. 
    3. Sprinkle the mozzarella over the pesto sauce and dust the Parmesan cheese on top. 
    4. Place in oven to bake for 5 minutes or until desired doneness has been achieved.
