World’s Healthiest Kale Caesar

 

INGREDIENTS (serves 6):

  • Juice of 1/2 lemon
  • 1/4 tsp salt
  • PREPARATIONS:

    1. Prepare caesar dressing by following dressing directions. Set aside.
    2. Chop/ tear kale into bite-sized pieces and place into a large bowl. Add olive oil, lemon juice, and salt and massage kale until softened (~3 minutes).
    3. Pour prepared dressing over kale and toss so kale is evenly coated.
    4. Garnish with additional parmesan cheese, salt and pepper, and/or croutons as desired.
