No-Bake Chocolate-Dipped Truffles

 

INGREDIENTS (serves 6):

TOPPING SUGGESTIONS

  • Sprinkles, nonpareils
  • Matcha powder
  • Cocoa powder
  • Chopped nuts (pistachios, almonds)
  • Coconut flakes

PREPARATIONS:

  1. Lay a rectangular piece of parchment paper out on counter. Unwrap FIBER/PROTEIN bar and using a knife divide into 12 small pieces. Place on parchment paper. 
  2. Roll each bar squares into spherical balls on parchment paper and set aside. 
  3. Fill a small double broiler with water and place over medium heat to bring to a boil. Add chocolate chips and instant coffee, gently stirring until melted. 
  4. Using a toothpick dip each truffle into the melted chocolate and submerge in topping of choice. Place back on parchment paper and allow to cool before serving.
